Veggie Tex Mex Brunch Burger

I’m always on the lookout for new and easy brunch recipe ideas. This time I wanted not only a fun brunch recipe but something that I could serve to family and friends who prefer veggie cuisine. That’s when I love to turn to MorningStar Farms in the frozen food section at my local Walmart store. They always have a great selection of veggie products to choose from. When I saw the MorningStar Farms® Tex-Mex Burgers, I knew immediately I was going to make a fun Tex Mex Brunch Burger!

The Tex Mex burgers are 100% vegan made with plant-based protein from black beans, pinto beans, garbanzo beans, and rice. The new bigger quarter pound patty is a perfectly seasoned burger with green chilies, jalapeno peppers, and red peppers to ensure a flavorful and filling dish that serves up a whopping 11 grams of protein!

These burgers are super easy to cook either on the stove top or on the grill. When I’m cooking for a crowd, I always use the grill, but if I’m cooking for just myself, I opt for the stove top.

For my brunch burger, I am adding cheese and egg which no longer make this a vegan dish, however, many vegetarians will still eat these products. It’s best to know the eating preferences of your guests. If you’re looking for a vegan substitute, you can opt for a vegan cheese and maybe add some avocado instead of egg. Get creative!

To get started, either cook your Veggie Tex Mex burger patty in a pan on the stove top or grill as directed. Look how big that patty is!

When cooked through, add a slice of pepper jack cheese and place onto a waffle (I used frozen waffles to make it super easy but these are even better on fresh homemade waffles!)

Next, top with a fried egg cooked to your liking.

I prefer “sunny side up”, then add a bit of salsa for a little extra kick!

The best part is the Tex Mex burgers have no artificial colors or flavors and aren’t just for vegetarians…

everyone always loves them!

Seriously, look how thick that new quarter pound patty is!

I served mine up with a little salsa and avocado on the side for guests to spice up to their tasting or to mix up a little guacamole on the spot for another fun addition.

I’d say start to finish, this Easy Veggie Tex Mex Brunch Burger took only 10 minutes to pull together!

This Veggie Tex Mex Brunch Burger is super quick and easy to pull together in about 10 minutes and will please all your guests!

Ingredients

  • Frozen Waffles
  • MorningStar Farms® Tex-Mex Burgers
  • Pepper Jack Cheese
  • Salsa
  • Egg

Instructions

  1. Toast 2 frozen waffles as directed on package.
  2. Cook your MorningStar Farms® Tex-Mex Burgers as directed on the packaging.
  3. Top with cheese and let melt.
  4. Place patty on waffle.
  5. Cook egg in a pan to your liking ( I prefer sunny side up).
  6. Place on top of your burger patty.
  7. Add a spoonful of salsa.
  8. Top with a second waffle for a fun sandwich.
  9. Serve with sliced avocado and extra salsa.
