Watermelon Moscow Mule

Crabbie’s Alcoholic Ginger Beer has shared another wonderful recipe with us via 52 Thursdays. This one you definitely won’t be able to resist trying.  I’m in love with the idea of using fresh blended watermelon and serving it up in the skin. Brilliant! I’m now sitting here wondering if 10am is too early to try this out? It’s really just a smoothie right? I think I can justify this in the morning because it’s totally healthy (wink wink).

Watermelon Moscow Mule

Ingredients

  • 2 mini watermelons – yield 4 shots of watermelon juice
  • 2 shots vodka
  • 4 springs of mint
  • 1 sm. lime, juiced
  • 1 bottle of Crabbie’s Alcoholic Ginger Beer

Instructions

  1. Cut your mini watermelons in half and clean them out with a large spoon.
  2. Scrape edges and save all watermelon chunks.
  3. Take your knife and gently slice off a small bit of the bottom of the watermelon so that it will sit flat on the counter.
  4. Add watermelon chunks and mint to your blender.
  5. Blend well until watermelon is pureed.
  6. Strain over strainer into container if you do not like pulp.
  7. Save juice and discard pulp.
  8. Combine watermelon juice, lime juice and vodka into a cocktail shaker filled with ice.
  9. Shake well and strain into your watermelon cup.
  10. Top with Crabbie’s Ginger Beer.
  11. Stir.
  12. Garnish with a slice of watermelon lime.

 

Tip- Use the leftover watermelon puree for popsicles
