Sweet & Savory Butternut Spirals Dessert Pizza

As you know I’m a big foodie and I love to share recipes with you. I’m also part of a local foodies group that gathers monthly to cook up “food challenges” and experiment and share recipes paired with our favorite wines. This month the challenge was to use a spiralized or riced veggie in your recipe. My mind went immediately to my favorite spiralized veggie… butternut. Today I’m making a Butternut Sprials Dessert Pizza combining the sweetness of cinnamon, brown sugar and fruits with the savory flavors of butternut and blue cheese!

My intention was to originally make a cauliflower pizza crust but I just ran out of time. Next time I’ll experiment with this! So today I’m cheating and bought ready-made pizza dough at my local market. Check out the link below if you want to make your own pizza dough.

Ingredients:

Flatbread Pizza Crust

(you can make your own but today I used a premade dough to save time! Try this recipe if you want to make your own: Quick Flatbread Pizza Dough

Apple Butter

Frozen Spiralized Butternut Squash

(I used frozen Green Giant Brand – 12oz. to make 2 flatbreads)

Brown Sugar

Cinnamon

Chopped Walnuts

Dried Cranberries

Blue Cheese Crumbles

Apple Slices

Honey


Start by rolling out your dough onto parchment paper and coat liberally with apple butter.

Meanwhile, microwave your spiralized butternut for 5 minutes until tender but not fully soft

Toss your cooked butternut with approximately 1/2 Cup Brown Sugar and 1/2 TBSP Cinnamon and spread evenly on your crust.

Spread chopped walnuts over flatbread

Then add dried cranberries

Don’t forget the blue cheese! It adds a rich savory component.

Top with thinly sliced apples and then top with a little more cinnamon and sugar.

Bake as directed. Drizzle with honey for a little extra flavor. Serve hot or cold… either way, it’s delicious!
