Sunbutter Salad Dressing

I got this recipe from a friend at work.  The original recipe was made with almond butter but I didn’t have any so substituted Sunbutter instead.   This dressing is so good that I nearly ate it all without even using it on a salad. It is sweet and tangy and perfect with a green salad.  The flavours blend so well together.

Sunbutter Dressing

Ingredients

  • 3 tbsp Sunbutter
  • 1 tbsp Olive Oil
  • 2 tbsp Orange Juice
  • 3 tbsp Water
  • 1 tbsp Mustard (I used Dijon Mustard)
  • 1/2 tbsp honey
  • 1/2 tsp garlic (I minced a small garlic clove)
  • 1/4 tsp salt

Instructions

  1. Mix all ingredients together. I put all ingredients into the food processor and mixed until there were no lumps

Notes

  • This recipe made just under 2/3 cups. Store remainder in fridge.


 When I received the recipe it was to be used in a salad made with fresh greens, blueberries, grapes, chicken, and feta cheese.  I made a Quinoa Salad that I ate it with.
