Spinach is another one of those love it or hate it vegetables.
This leafy green is an excellent source of vitamin K, vitamin A, vitamin C and folic acid as well as being a good source of manganese, magnesium, iron and vitamin B2.
Raw spinach is often served alone as the main green salad with strawberries, bacon and even eggs.
It is easy to over cook it because of its high water content. A quick steam is adequate for most dishes.
Eggs Florentine is popular breakfast dish that utilizes spinach.
Spinach pairs well with many vegetables. Adding artichokes and spinach produces a wonderful warm dip.
Throw a few leaves in soups and stews for added nutrition.
