Skinny Black Bean Chicken Wrap

Ingredients

  • 4 Large flour tortillas, warm (low carb or whole wheat)
  • 1 Lb boneless chicken breast, cooked
  • 1 Tsp chili powder
  • 1 Tsp cumin
  • 1 Tsp salt
  • 1 Tsp pepper
  • 1 Cup diced tomatoes
  • 2 Cups mixed salad
  • 2 Cups black beans, drained
  • ΒΌ Cup chopped cilantro
  • 2 Cups shredded Monterey cheese

Instructions

  1. Chop cooked chicken breast into bite size pieces and toss with chili powder, cumin, salt and pepper.
  2. Lay salad mix and chicken breast onto your tortilla
  3. Add cheese
  4. Add black beans, diced tomatoes & cilantro
  5. Roll up tortilla like a burrito
  6. Cut & serve!


Notes

  • To save for snacks, wrap in plastic wrap and store in the refrigerator. Optional: Serve with salsa.
