Seahawk Yogurt Fruit Cups

You might have noticed by now that I am a big Seahawks fan (whoot whoot 12th man!) and you have been seeing quite a bit here to get ready for the biggest game day of the year.   When the Seahawks made the play-offs, I put together a little video for The Rachael Ray Show of my Seahawks Yogurt Fruit Cup Recipe.  Well, as it turns out, our video skills with my iphone are not quite up to par so needless to say, they didn’t use it, BUT… I’m posting it here for you all to see anyway!!  (just promise you won’t tease me about how terrible it is!)

Yield: 24

Ingredients

  • Phillo Dough Sheets or Shells
  • 1 TBSP Melted Butter
  • 1 Cup Plain Yogurt
  • 1 Cup Whipped Cream Cheese
  • 1 1/2 tsp Cinnamon
  • 2 1/2 TBSP Brown Sugar
  • 1 1/2 tsp Vanilla Extract
  • Sliced Kiwi
  • Blueberries

Instructions

For the Shells

  1. If you are using sheets, roll out flat and separate 3 layers
  2. Brush with melted butter
  3. Stack and cut into squares
  4. Press into mini muffin pan
  5. Bake at 350 degrees for 10 minutes until golden brown
  6. Remove and let cool

For the Filling

  1. Mix yogurt, cream cheese, cinnamon, brown sugar and vanilla in a bowl
  2. Stir until smooth
  3. Spoon into shells
  4. Garnish with Kiwi and Blueberries

Notes

  • Change up your fruit on top for any occasion! Keep refrigerated.
