Rosemary Garlic Chicken


  • 1 leg quarter per person
  • 1 garlic clove per leg quarter, sliced
  • 1 4 inch piece of fresh rosemary per leg quarter, cut in half
  • sea salt and freshly ground black pepper to taste


  1. Preheat oven to 350 degrees. Place the garlic slices on the chicken underneath the skin, making sure to put some on the leg and some on the thigh. Insert the rosemary underneath the skin, placing one half under the leg skin and the other half under the thigh skin. Sprinkle with salt and pepper (on the outside of the skin). Bake for about an hour or until juices run clear.
