Rosemary Garlic Chicken
I just love this rosemary garlic chicken recipe. It is one of my favorite chicken recipes because it is truly delicious, but it is also super easy. What more could you ask for? How about really inexpensive too? Leg quarters regularly make the sale page of our local grocery store for ridiculously inexpensive prices.
I have written the recipe for one leg quarter, so you simply need to double, triple, etc. for however many people you are feeding. The fact that the recipe calls for just one of each ingredient makes this really easy to do. I’m telling you, easy all around, yet yummy. It makes a perfect weeknight meal.
Rosemary Garlic Chicken
Ingredients
- 1 leg quarter per person
- 1 garlic clove per leg quarter, sliced
- 1 4 inch piece of fresh rosemary per leg quarter, cut in half
- sea salt and freshly ground black pepper to taste
Instructions
- Preheat oven to 350 degrees. Place the garlic slices on the chicken underneath the skin, making sure to put some on the leg and some on the thigh. Insert the rosemary underneath the skin, placing one half under the leg skin and the other half under the thigh skin. Sprinkle with salt and pepper (on the outside of the skin). Bake for about an hour or until juices run clear.
Simple to make and sounds delicious!!
