Quinoa Butternut Breakfast Hash

Quinoa has skyrocketed in popularity not only because of all of it’s health benefits, how easy it is to cook, but because it is so versatile in using in a variety of dishes.  This simple Quinoa Butternut Breakfast Hash is a filling dish packed with nutrition, packs protein and a big punch of flavor.  It is a quick and easy dish to make using pre-cooked Quinoa, (How to Cook Quinoa) and start to finish in one skillet.

  • 1 Pound Sausage
  • 1 Red Pepper ~ Diced
  • 1/2 Onion ~ Diced
  • 2 Cups Frozen Cubed Butternut
  • 1 Cup Cooked Quinoa


  1. In an oven safe skillet, brown sausage
  2. Stir in peppers, onion, butternut and quinoa
  3. Bake at 350 for 30 minutes until butternut is cooked through
  4. Serve
