One of the most amazing flavors of the season is pumpkin.
And these pumpkin muffins I am sharing with you today are loaded with flavor.
They have a crumb topping which makes them a little extra special.
Ingredients:
Muffins:
- 3 cups flour
- 1 Tablespoon plus 2 teaspoons pumpkin pie spice
- 2 tsp. baking soda
- 3 cups sugar
- One can pure pumpkin
- 4 large eggs
- 1/2 cup vegetable oil
- 1/2 cup water or orange juice
Crumb Topping:
- 1/2 cup sugar
- 1/4 cup flour
- 1 tsp pumpkin pie spice
- 2 TBSP butter
- 2 TBSP oatmeal
Directions:
Combine the Crumb Topping ingredients in a bowl and using a pastry cutter, or two knives, and cut the butter into the mixture until you have crumbs; set aside.
Combine the flour, pumpkin pie spice, baking soda and salt in large bowl and set aside.
Combine sugar, pumpkin, eggs, oil and juice in large mixer bowl; beat until just blended.
Add flour mixture to pumpkin mixture; stir just until moistened.
Spoon batter into prepared muffin cups, filling 3/4 full.
Add one tablespoon of the crumb topping to the top of each muffin.
Bake at 350 for about 20 to 30 minutes or until a toothpick inserted in the middle of a muffin comes out clean.
Depending on the size of your muffin pans, you should get 24 muffins.
