Pea Pesto Crostini

A few months ago we hosted our son’s graduation party and a friend of mine

made this incredible Pea Pesto Crostini to share with us.

We all loved it and I thought I would share it with you today as the holidays are coming up

and I’m sure you’re looking for a great EASY appetizer to prepare for guests.

The best thing about this pea pesto is it can be prepared ahead of time

so all you have to do is toast the bread right before guests arrive!  

Pesto is traditionally made with basil, but this recipe uses frozen peas! 

Making it even more perfect for this time of year.

Ingredients

Ingredients

  • 1 (10-ounce) package frozen peas, defrosted
  • 1 garlic clove
  • 1/2 cup grated Parmesan
  • 1 teaspoon salt, plus extra for seasoning
  • 1/4 teaspoon pepper, plus extra for seasoning
  • 1/3 cup olive oil

Crostini

  • 8 slices baguette
  • 1/3 cup olive oil
  • 8 cherry tomatoes

Instructions

  1. Pulse together the peas, garlic, Parmesan, 1 teaspoon of salt and 1/4 teaspoon of pepper in a food processor. With the machine running, slowly add the olive oil until well combined, about 1 to 2 minutes. Season with additional salt and pepper, if needed.
  2. Transfer to a small bowl and set aside while you prepare the bread slices.
  3. Brush both sides of the sliced bread with olive oil and broil until golden, about 1 to 2 minutes. Be careful to watch the bread!
  4. Transfer the bread to a plate and spread 1 to 2 tablespoons of the prepared pesto on each slice.
