Orange Pomegranate Quinoa Salad

A wonderful flavour full salad made with quinoa, oranges, and pomegranate, with a light vinaigrette dressing

Ingredients

  • 1 cup water
  • 1/2 cup uncooked quinoa
  • 1/2 tsp salt
  • 1/8 cup Pompeian white wine vinegar
  • 1 tsp orange peel
  • 1 tbsp pomegranate juice
  • 2 tbsp orange juice
  • 3/4 tbsp Pompeian Olive Oil
  • 18 tsp black pepper
  • 1 cup orange slices
  • 1/4 cup pomegranate seeds
  • 1/3 cup red onion diced
  • 1 1/2 tbsp parsley flakes

Instructions

  1. In medium saucepan add quinoa, water and salt to a boil, decrease heat and simmer for approximately 15 minutes until quinoa is soft and liquid is evaporated. Fluff with fork and set aside. Cool completely.
  2. While quinoa is cooking deseed pomegranate. Peel and cut oranges into bite size pieces. Dice onions.
  3. In small bowl mix together white wine vinegar, pomegranate juice, orange juice, orange peel, olive oil and pepper. Whisk until well mixed.
  4. In bowl, mix together quinoa, vinegar mixture, oranges, pomegranate seeds, onions and parsley flake. Toss gently to combine all ingredients.

Notes

  • I served salad over Romaine lettuce.
