Mexican Hot Chocolate Cinnamon Chip Cookies

  • 2 sticks unsalted butter, at room temperature
  • 1 1/2 cups brown sugar
  • 1 egg
  • 1 egg yolk
  • 1 tsp. baking soda
  • 1 1/2 tsps. salt
  • 1 tsp. cinnamon
  • 1/2 tsp. ground cayenne pepper
  • 1 tsp. vanilla extract
  • 1/2 cup cocoa
  • 2 cups all-purpose flour
  • 1 10 oz. bag cinnamon chips

Instructions

  1. Preheat oven to 350 degrees.
  2. Line two large baking sheets with parchment.
  3. With and electric mixer, cream together butter and sugar until light and fluffy.
  4. Add egg and egg yolk and mix until well combined.
  5. Add baking soda, salt, cinnamon, cayenne, and vanilla and mix well.
  6. Mix in cocoa and flour and mix until will combined.
  7. Stir in cinnamon chips.
  8. Using a small cookie scoop, drop scoops onto cookie sheet.
  9. Bake for 12 to 14 minutes or until almost set one sheet at a time.
  10. Remove from the oven and cool on a wire rack before eating.
