Meatless Monday – Chocolate Cake Waffles and Coconut Cream

Why settle for an ordinary waffles for breakfast when you can have chocolate cake waffles…stuffed with coconut cream!  Oh, but wait…best part is…they are good for you!  Yes, you heard (or read) me correctly.  These waffles are not only a delightful treat, they are packed full of fiber, no added sugar, no cholesterol and a great, healthy way to start your day!

This would be the recipe I was working on when my neice came bounding thru the door, saw my can of coconut milk and begged me to make a coconut cream pie.  I actually took my leftovers from this recipe and turned it into mini pies.  Click HERE to see that post and recipe…it was AWESOME!!

 

Ingredients:

Waffles:

  • 1 Cup Kodiack Cakes Flapjack and Waffle Mix
  • 1 Cup Water
  • 2 TBSP Cocoa Powder
  • 3 TBSP Sugar Free Vanilla Syrup

 

 
 
 

Coconut Cream:

  • 1 Can Coconut Milk
  • 1 TBSP Sugar Free Vanilla Syrup
  • 1 1/2 TBSP Instant Clear Jel

I use Kodiac Cakes (found at my local Kroger Store).  They are so easy (just add water) and super yummy.  All natural whole wheat, oats and honey.  No added fat, cholesterol, or sugar!

Directions:
 
Waffles:  Mix the waffle mix, water, cocoa and sugar free syrup together into a bowl.  It will be slightly lumpy.  Place in your waffle maker and taa…da…  you have chocolate cake waffles!
 
Coconut Cream:  Add together coconut milk, sugar free syrup and instant clear jel into a large bowl.  With a handmixer, blend for about 3-5 minutes until thickend and smooth.  If needed add a little more clear jel to thicken until you reach desired consistancy.
 

I got “fancy” and quartered my waffles and stuffed them, but it tastes just as good if you just put a dollop right on top and dig in!  What could be better than dessert for breakfast!
