Low Carb Recipes: Jalapeno Popper Cauliflower Casserole

The Daily Dish Magazine has featured several recipes in our ongoing series of low carb and low sugar recipes for those managing diabetes or looking to live a low carb lifestyle.  Today’s recipe is a feature from Melissa Sevigny at  I Breathe…I’m Hungry.  I Breathe…I’m Hungry is a blog devoted to delicious low carb and gluten free recipes.  The recipes you’ll find at the blog are innovative, delicious,and easy to prepare.  Sometimes it can be difficult to find delicious low carb recipes, but you’ll definitely find a great collection at I Breathe…I’m Hungry.

Our featured low-carb recipe is Jalapeno Popper Cauliflower Casserole.  I found this recipe on Pinterest and was immediately intrigued because I love anything made Jalapeno Popper style!  I also really liked the idea of using cauliflower in the casserole. 

I’ve made a few recipes that substitute cauliflower for more traditional ingredients like potatoes or even meat; recipes like Baked Bang Bang Cauliflower, and a recipe  for Cheesy Garlic Cauliflower Breadsticks from another great blog with gluten free recipes called Mom, What’s for Dinner.  But a Jalapeno Popper Casserole really took the cake for me so I had to try it out and I absolutely loved it!
