Jerusalem Artichokes (Sunchokes) Earth Apples
Jerusalem artichokes or “sunchokes” are members of the sunflower family. These vegetables have a slightly nutty taste and the texture of potatoes. These vegetables contain only a little starch. Instead it contains inulin (not insulin), which becomes fructose stored in the ground or refrigerated. This makes it sweeter than potatoes.
There is no need to peel these knobby tubers before use. Store sunchokes in the refrigerator.
They can be eaten raw in salads alone or paired with apples or Jicama. You can substitute it for potatoes or parsnips in your favorite dishes.
These tubers are a good source of potassium, iron, and copper.
