Homemade Queso Dip

This weekend is another round of playoff games for football! 
My son loves the Denver Broncos and I really hope they win.  
 
I think we all need something fun to snack on while the games are on TV and 
this Homemade Queso Dip is perfect! 
 
It’s not hard to make and there definitely is a different taste knowing
you’re eating “real cheese” instead of the fake cheese…and the taste is amazing!
 
Your family will really enjoy this homemade version of queso dip and you’ll be happy knowing 
exactly what’s in the cheese.

Homemade Queso Dip

Ingredients

  • 1 tablespoon butter
  • 1 tablespoon flour
  • 1 to 2 Jalapenos, seeds removed and diced
  • 1 can of green chillies, chopped
  • 2 cloves of garlic, chopped
  • 1/2 cup milk or half and half
  • 1 can Rotel tomatoes, mild or whatever strength you desire
  • 3 cups shredded cheese, I used a combination of cheddar and pepper jack
  • 1/4 cup Greek yogurt or sour cream
  • salt and pepper to taste

Instructions

  1. In a heavy saucepan, melt the butter and then add the flour.
  2. Let the flour cook for a few minutes until slightly browned.
  3. Add the jalapeno, garlic and green chillies and cook for a few minutes.
  4. Then add the 1/2 cup of milk and stir until slightly thickened.
  5. Add the can of tomatoes and continue to cook for a few minutes, until everything is combined.
  6. Turn the heat down and start adding your cheese; a little at a time.
  7. Cook over a low heat until the cheese is melted and combined.
  8. Now, remove from heat and add your Greek yogurt or sour cream.
  9. Taste and adjust the seasonings by adding salt and/or pepper.

Notes

  • Depending on how much "heat" you enjoy, you can add more or less of the jalapeno pepper.
