Homemade Manicotti

I hope you all have been enjoying our series on PASTA.
Today’s recipe that I am sharing with you is one of our family’s favorite meals
for holidays or special birthdays.
 
Homemade Manicotti…

I’m sure you’re all familiar with the pasta shaped manicotti shells you can 
purchase at any grocery store.  But, if you’re anything like me, you end up with 
a huge mess on your hands trying to stuff the ricotta cheese mixture into each shell…
 
 
Today’s recipe uses CREPES.
And yes, they are easy to make and produce the most delicious manicotti…
 
Ingredients for the Crepes:
 
4 eggs
1 cup water
1 cup flour
 
 
Combine the above together in a blender until smooth…
Heat a small frying pan and spray with cooking spray.
Using a 1/3 measuring cup, pour some batter into the pan and immediately
begin to spread the batter around…
Yes, pick up the pan and let the batter evenly coat the bottom of the pan…
After a minute, flip your crepe…
Transfer the crepes to a dish and start stacking.
Make sure you put a piece of wax paper in between each crepe…
 
Now on to our filling.  
Combine a 15 oz. container of ricotta cheese with one egg…
Spread a nice layer of the ricotta mixture down the center of one crepe…
Gently fold over…
Place the crepes seam side down in a baking dish that has a 
layer of tomato sauce on the bottom…
Cover with more tomato sauce and add mozzarella cheese on top. 
Don’t forget to sprinkle Parmesan cheese on top.
Bake at 350 until bubbly and hot;  about 30 minutes…
Looking good…

  2. Lois, that looks amazing and SO easy too! Definitely going to try that recipe. I wonder if I can use egg beaters and whole wheat flour? Will let you know how it turns out!
