This healthy cabbage soup recipe is packed full of flavor, easy to make, and makes dieting easy!
Ingredients:
½ Large Cabbage
2 Cups Chicken Stock (or Vegetable Stock)
1 Onion, Diced
2 Cloves Garlic, Minced
2 Stalks Celery, Sliced
1 Can Condensed Tomato Soup
1 Can Sliced Carrots
2 Tablespoons Dried Parsley
Olive Oil
Salt and Pepper
Healthy Cabbage Soup Recipe
In a pot, drizzle some olive oil and add your celery, garlic, onion, salt and pepper, and parsley. Mix well and allow to cook until onions turn translucent or until celery is softer.
Chop your cabbage in half and chop off the stem at the end. Allow the larger leaves to fall away. Chop your cabbage into smaller chunks and place in the pot along with your chicken stock.
Set heat to medium and allow mixture to simmer for about 15-20 minutes or until cabbage has gotten softer.
Add your tomato soup and mix well. Allow to simmer for about 5 minutes.
Add your carrots and allow to simmer for another 5 minutes.
*For a new flavor, try adding some fire roasted tomato chunks and chilies or even a bit of jalapeno for
some spice!

Notes
- For a new flavor, try adding fire roasted tomato chunks and chilies, or jalapenos for a bit of heat!
