Healthy Almond Joy Bars

A healthier alternative to the original Almond Joy Bar

Ingredients

Scale

Bottom Layer

  • 1/2 Cup Coconut Oil
  • 1/2 Cup Honey
  • 1/2 Cup Cocoa Powder
  • 2 TBSP Light Vanilla Yogurt

Top Layer

  • 1/2 Cup Coconut Oil
  • 1/2 Cup Honey
  • 1/2 Cup Unsweetened Coconut Shreds
  • 2 TBSP Light Vanilla Yogurt

Topping

  • 1/4 Coconut (toasted)
  • almonds

Instructions

Make Bottom Layer

  1. Warm coconut oil in microwave until liquid
  2. Add honey, cocoa and yogurt.
  3. Pour into pan 9×11 lined with wax paper
  4. Freeze for 10 minutes

Make Top Layer

  1. Warm coconut oil in microwave until liquid
  2. Add honey, coconut and yogurt.
  3. Pour over top of fudge bottom layer.
  4. Press toasted coconut and almond into top layer.
  5. Freeze an additional 10 minutes.
  6. Remove from wax paper and cut into squares.
  7. Serve
