Who doesn’t love Almond Joy Candy, right?  It has to be in my Top 3 candies ever.  Chocolate and coconut.  The perfect pair.  This recipe was inspired by our friend here at Daily Dish, The Binomial Baker and her Healthy Fudge recipe.  I took the basic recipe and expanded on it to recreate on of my favorites, but in a guilt-free version.  This is the perfect recipe for kids to get into – no baking and super easy!  I hope you love it as much as we did! 

 

Healthier Almond Joy Fudge Bar Recipe

 


 

Start by gathering all of your ingredients

 

Healthier Almond Joy Squares

 

For the Bottom Layer:
Warm coconut oil in microwave until liquid
Add honey, cocoa and yogurt.
Pour into pan 9×11 lined with wax paper
Freeze for 10 minutes

 

Healthier Almond Joy Squares

 

For the top layer:
Warm coconut oil in microwave until liquid
Add honey, coconut and yogurt.
Pour over top of fudge bottom layer.
Press toasted coconut and almond into top.

Freeze an additional 10 minutes.
Remove from wax paper and cut into squares.

A healthier alternative to the original Almond Joy Bar

Ingredients

Bottom Layer

  • 1/2 Cup Coconut Oil
  • 1/2 Cup Honey
  • 1/2 Cup Cocoa Powder
  • 2 TBSP Light Vanilla Yogurt

Top Layer

  • 1/2 Cup Coconut Oil
  • 1/2 Cup Honey
  • 1/2 Cup Unsweetened Coconut Shreds
  • 2 TBSP Light Vanilla Yogurt

Topping

  • 1/4 Coconut (toasted)
  • almonds

Instructions

Make Bottom Layer

  1. Warm coconut oil in microwave until liquid
  2. Add honey, cocoa and yogurt.
  3. Pour into pan 9x11 lined with wax paper
  4. Freeze for 10 minutes

Make Top Layer

  1. Warm coconut oil in microwave until liquid
  2. Add honey, coconut and yogurt.
  3. Pour over top of fudge bottom layer.
  4. Press toasted coconut and almond into top layer.
  5. Freeze an additional 10 minutes.
  6. Remove from wax paper and cut into squares.
  7. Serve

While the ingredients are much healthier than most recipes, remember oil is oil and is still a fat – so eat it in moderation.  

Also- honey is a natural sugar, same goes – eat in moderation.  Enjoy!

    If you have to freeze them to get them to be solid, how do you store them? Freezer? Fridge?

    1. I store mine in the fridge. They stay soft but solid there. If you like super firm, then you can store in freezer. I do not recommend leaving out at room temperature for any length of time due to the yogurt.

  2. Delicious recipe, I did not have any almonds in the house so I chopped up some cashew nuts instead and it worked very well.

    This is a good healthy alternative Saturday night instead of filling the kids with bags af store bought candies

    Love almond joys! I will use agave also, maybe add some ground almonds to get the almond flavor in it!

  5. This sounds fantastic. Printed as soon as I read it. Thanks so much for sharing. I’m learning to use agave nectar as a substitute for honey. It isn’t as sweet, but has a lower glycemic index and better for those of us watching our sugars.

    1. Great idea to use Agave. This recipe is plenty sweet so I think Agave would be wonderful!
