I previously shared my twist on a classic green bean casserole; Cheesy Onion Green Bean Casserole. It’s always a huge hit. Now I’ve found a way to serve it that gets everyone super excited and is a great compliment to any meal. Acorn squash.
Acorn squash is so easy and affordable in the Fall and makes a wonderful serving dish. The mild flavor is a perfect compliment to the flavors in my cheesy onion green bean casserole using Del Monte® Green Beans, Campbell’s® Condensed Cream of Mushroom Soup and French’s® Crispy Fried Onions. When served up, it looks impressive and gets a lot of “oohhhs and ahhh’s” in admiration.
Simply follow this recipe and set aside. Cut an acorn squash in half and scoop out the seeds. Fill each half with the green bean casserole mixture and bake as directed. (You may find you need to extend the baking time to allow the squash to fully cook and become softened.) Remove from oven and let set for 5 minutes before serving.
That’s it! This is my twist! One recipe batch will fill about 3 acorn squash (6 halves) depending on size. Today I served mine up with some sauteed garlic mushrooms and parmesan chicken tenders. Amazing easy meal for Fall!
