Small Batch Cream Biscuits

  • 1 cup self-rising flour or 1 cup all-purpose flour with 1 1/4 tsps. baking powder and 1/4 tsp. salt whisked in
  • 1/2 cup heavy cream (add an extra tablespoon if you are using all-purpose flour)

  1. Line a baking sheet with parchment.
  2. Preheat oven to 375 degrees.
  3. Stir cream into flour until moistened.
  4. Turn mixture out onto a lightly floured surface and work a little more flour into the dough until it is no longer sticky. Pat into a 1/2 inch disk.
  5. Cut using a 2 inch biscuit cutter. You may re-work the scraps and re-cut the dough at least once, but doing this too many times will result in tough biscuits.
  6. Place on baking sheet and bake for 10 to 15 minutes or until golden.
