Eating for Your Health: Asaparagus

Asparagus  

First, I want to say Happy Easter to everyone celebrating today!  I tried to come up with a eating for your health food today that I thought was springy and might be on your Easter table.  I have written about eggs before, so I decided to go with asparagus.  To me, asparagus just shouts spring.  But, you know, I really have not seen it on a lot of those healthy food lists you see everywhere, so I did my research, and asparagus is really a healthy food we should all be eating!

In addition to being a spring favorite vegetable, asparagus is high in vitamins K, B1, B2, C, and E, folate, copper, and selenium.  Asparagus is high in antioxidants and is anti-inflammatory making it heart and blood sugar healthy.   It is high in inulin for digestive health, may reduce the risk of certain cancers, and is even a natural diuretic.  So, asparagus should definitely be on your must-eat list!
