{Daily Dish Recipe} Caponatal Eggplant Appetizer

Here’s a great appetizer recipe for your New Years celebrations that is

also vegetarian!  Today’s Daily Dish Recipe is from

Winelady Cooks and her recipe for Caponata Eggplant Appetizer.

Joanne shares some lovely memories of this appetizer in her

blog post and explains that Caponata is

an Italian/Sicilian dish made with eggplant, olives, capers along

with onions and tomatoes all cooked together in one pot.

Sounds delicious!
