The holidays are hectic and looking for quick short cuts in cooking saves me so much time in the kitchen. By using easy, quick cooking ingredients, I can get my recipe finished in no time and move onto the next project. In a sponsored challenge by Minute® Rice, I created a new easy recipe for the holidays! Minute® Rice is one of my personal favorite short cut ingredients. It’s one thing that is on my “Pantry Staples List” to have at all times. Why? Because it truly is so quick and easy to use, ready in just 5 minutes.
For this foodie challenge, I chose to use Minute® Rice in a rich and creamy 10 Minute Creamy Eggnog Rice Pudding with Cranberries to celebrate the flavors of the season! We have been making a classic version of this recipe at home for years and thought trying to add some fun new flavors would be perfect for Christmas.
It’s so simple you won’t even believe how easy this recipe is! Just mix all the ingredients together in a pot, bring to a boil, cover and let simmer for 5 minutes. Stir. Cover again and let sit for another 5. Seriously… It’s that easy!! By using Minute® Rice, it quickens the cooking time on this recipe significantly and I love the fact that the rice cooks with the recipe all in one step!
A quick and easy pudding ready in just 10 minutes!
- 3 Cups Eggnog
- 2 Cups Minute® Rice Uncooked
- 1/4 Brown Sugar
- 1 TBSP Butter
- 1 tsp Vanilla
- 2 tsp Cinnamon
- 1/4 Cranberries (Dried)
- Stir together all ingredients in a medium pot
- Bring to a boil over medium heat, stirring occasionally
- Cover and reduce heat to low and simmer 5 minutes
- Stir and recover
- Turn off heat and let sit on warm burner another 5 minutes
- If you prefer a thinner pudding, add more eggnog and stir right before serving.
