Our garden has been growing so beautifully this year. 

One of my favorite things to make with vegetables fresh from our garden or the farmer’s market is this delicious Corn Fiesta Salad…

 

Ingredients

 

Two ears of fresh corn; removed from the cob

One can red kidney beans or black beans; rinsed and drained

One can diced tomatoes; drained

One cucumber; chopped

1/3 cup red onion; chopped

1 TBS. chopped parsley

1 TBS. chopped basil

Italian Salad Dressing

 

Directions

 

Combine everything together in a bowl and add the salad dressing.

I used Good Seasons Italian Dressing, but your favorite would work nicely also.

 

Cover and refrigerator for one hour before serving. 

 

Feel free to add chick peas or black eyed peas,

whatever you have on hand works perfect for this salad.

That’s the beauty of this recipe, there is no right or wrong!
