Years ago, we had a coffee shop in our mall, that made the yummiest rolls, with a cinnamon-sugar topping and an amazing center filled with cream cheese. I was so disappointed when they sold their business and the new owners didn’t keep them on the menu. I decided that I had to make them myself! Something that good shouldn’t be gone forever.
Cinnamon Clouds made with Artisan Bread Dough
Here is what you will need:
1 recipe of Artisan Bread Dough
1/4 cup Sugar
1 1/2 teaspoons Cinnamon
Butter, melted
Cream Cheese
Grab a handful of dough, a little smaller than a golf ball size.
You can really make these whatever size you want to, so no worries about whether you have too small or too big of a ball.
Combine cinnamon-sugar mixture. Place melted butter in a small bowl and have cream cheese out and ready to use.
Roll out each dough ball. You can do this by using a rolling pin or you can stretch the dough out with your hands.
Using a pastry brush, brush dough with the melted butter.
Sprinkle cinnamon-sugar on top of the butter.
Place a spoonful of cream cheese in the middle of each piece of dough.
Pull dough up over cream cheese, and then pinch all of the seams. You want to make sure you pinch them completely closed, otherwise the inside will leak out when it is baking.
Place dough upside down in a greased muffin tin. Brush melted butter on top of each one and then sprinkle the cinnamon-sugar on top of that. Bake at 450 degrees for 10-20 minutes. Baking time will depend on your oven and the size you made the dough balls.
