Chicken and Waffles…. not just a fad! This dish is a staple in our house and is always a Sunday Brunch favorite. The best part of this recipe? It’s SO easy!!
Here’s what you need:
*Cooked Shredded Chicken Breast (or diced chicken tenders)
Bacon
Onion (Diced)
Cream Cheese
Shredded Cheddar Jack Cheese
Sriracha Mayo (or plain mayo if you don’t want a little spice)
Frozen Waffles
Green Onion (for garnish)
* Use any kind of chicken you like… I find it easy to buy a small cooked chicken and pull off the breast and dice it. Chicken strips work well too. Make your own shredded chicken easily by boiling your chicken breasts until tender and shred with a fork.
Chicken and Waffles Casserole
Start by cooking your diced bacon and saute your onions.
Stir together chicken, bacon, onion, cream cheese, and sriracha mayo in a bowl.
Cut the frozen waffles into small squares.
Layer the chicken mixture into the bottom of a greased casserole dish and top with cheddar jack cheese.
Layer waffles on top. Cover and Bake at 350 degrees for approximately 25 minutes until heated through.
Remove from oven and remove foil. Continue baking another 5-10 minutes until waffles are golden brown. Top with green onion.
Serve! I like to add a few more dollops of Sriracha to mine!
