One of my all time favorite snacks is buffalo chicken wings smothered with blue cheese. I’m always looking for new inventive ways to enjoy buffalo chicken to change things up. One of my most popular creations combined two classics… buffalo chicken, and chicken and waffles. Yes… everyone loved my buffalo chicken and waffles sandwich. It’s super easy to make and full of flavor. Check it out!

Buffalo Chicken and Waffles Sandwich

I started with a trip to my local Walmart store where I picked up everything I needed for this recipe. With only 6 ingredients, this sandwich is a cinch to make… especially since I take a shortcut and use Kellogg’s® Eggo Thick & Fluffy Original frozen waffles. They remind me of homemade with the new and improved thick and fluffy Belgian style and the addition of Madagascar Vanilla. With more flavor than ever, they provide just a bit of sweetness that compliments the heat of the buffalo sauce.

This twist on chicken and waffles is a great way to use Eggo Waffles for any occasion. They can take you right from a simple, quick, and nutritious breakfast on the go, all the way to a savory dinner creation!

Buffalo Chicken & Waffles Sandwich

To get started, boil your chicken breasts in water on the stove for about 45 minutes until cooked through. You can also opt to use a slow cooker and cook on low all day.

Drain and place the chicken breasts into a bowl. Use forks to pull apart and shred the chicken.

Stir in some buffalo wing sauce. Use as much as you like. I prefer mine a bit sloppy so I tend to be a little heavy-handed when adding it in!

Now it’s time to prepare your Eggo Thick & Fluffy Original Waffles. Simply pop them into the toaster and wait. I like mine a bit crispier so I keep mine in until they are golden brown.

 

Now simply start to assemble your sandwich.

Place a heaping spoonful of shredded buffalo chicken atop a waffle.

Next, top with blue cheese dressing and blue cheese crumbles.

Then add some shredded lettuce to your second waffle.

Now put it together into one delicious sandwich!

YUM! So good.

The sweetness combined with the heat of the buffalo chicken, the savory blue cheese, and the cool crunch of shredded lettuce… this recipe is a winner!

Buffalo Chicken and Waffles Sandwich

Ingredients

  • Kellogg's® Eggo Thick & Fluffy Original Waffles
  • 4 Chicken Breasts
  • Buffalo Sauce
  • Blue Cheese Dressing
  • Blue Cheese Crumbles
  • Shredded Lettuce

Instructions

  1. Boil your chicken breasts for about 45 minutes until cooked through and tender.
  2. Place chicken in a bowl and shred with a fork.
  3. Stir in Buffalo Sauce.
  4. Cook Kellogg's® Eggo Thick & Fluffy Original Waffles as directed.
  5. Top a waffle with a heaping spoonful of shredded buffalo chicken, blue cheese dressing, crumbled blue cheese, and some shredded lettuce.
  6. Top with an additional waffle.
  7. Serve.
