Bok Choy Know Your Fruits and Veggies

Bok Choy
Bok Choy, (Brassica chinensis) is a type of Chinese cabbage with dark green leaves mounted on thick white stalks. This vegetable can be found in most stir-fry dishes and even deep fried and served as a sweet dusted with sugar!

Bok choy is a good source of vitamin A and vitamin C,  folate, calcium, iron and fiber. 

Try using this cabbage as a healthy side dish sauteed in sesame oil with garlic, ginger, red pepper flakes. You can eat this relative of the mustard family, raw in salad, slaws, cooked in soups and stews as well as those stir-fry dishes we love.

esh grown food as a focal point. . My hands-on programs and instruction helped hundreds of children and adults learn about where their food comes from and how important fresh food is for your body.
Currently I’m a cook at a college in Pennsylvania. We prepare everything we can from scratch, including our potato chips that tout the seasoning of the day!
