Autumn Chicken Salad

 

Salads are not just for summer!  This autumn chicken salad is busting with the flavors of fall.  It has chunks of apple, cranberries, and pecans.  It makes a perfect lunch or a dinner on those not-quite-cool-yet autumn days.  Personally, I am so ready for fall, but the high today is supposed to be 88 here in Georgia, so this gave me all the flavors without the heat.  Hope you enjoy!

Autumn Chicken Salad

4 cups cooked chicken, diced

1/2 cup chopped pecans, toasted

1/2 cup dried cranberries

1/2 cup chopped apple (I used granny smith.)

1/2 tsp. celery salt

1/2 cup sour cream

1/2 cup mayonnaise (I used light.)

Stir together all ingredients until well combined.  Serve with crackers or in a sandwich or even right by itself.
