Artichokes are a member of the thistle family. Looking at one makes it seem coated in armor. When you eat an artichoke you are eating the bud of the plant. If left to grow it would bloom and look just like a thistle.
Artichokes are usually eaten in layers. Steam the artichoke (we have a tutorial for it listed below). Pull off leaves layer by layer. I was shown to dip the leaf in olive oil and vinegar then drag the fleshy party across my teeth. It can be fun to eat as a group or private dining. Top prize is the soft heart at the bottom.
Artichokes are high in B vitamins, Vitamin C, Vitamin K, fiber and minerals.
