Almost Sugar Free Meringue Cookies


  • 1/2 cup egg whites
  • 1/8 tsp. salt
  • 1/2 granulated sucralose (I used Splenda.)
  • 1 cup bittersweet chocolate chips
  • 1 cup chopped pecans


  1. Line 2 large cookie sheet with parchment.
  2. Preheat oven to 300 degrees.
  3. Whip together egg white with an electric mixer on medium until foamy.
  4. Increase speed to high and whip until soft peaks form.
  5. While whipping, slowly add sucralose and continue whipping until stiff peaks form.
  6. Fold in remaining ingredients.
  7. Use a cookie scoop to drop small mounds onto cookie sheet.
  8. Bake at 300 degrees for 15 minutes..
  9. Turn oven down to 200 degrees and continue to bake for 1 hour and 45 minutes.
  10. Remove from parchment and serve immediately
