My Mother is from Germany.  Shortly after the war, she followed her sister to live in England.

She met my father in England.  He was a young soldier and swept my Mom off her feet!  They lived in England for a couple more years before my father was sent back to the United States.  He was sent to a small base in Texas and it was there, that I was created!  Well, that is another story!

Our family traveled as often as possible to Germany and England.  At one point in my father’s career, he was stationed in Korea.  My Mother, Brother and I lived with my Auntie for just over a year.

The three of us quickly became, “Brits” and it is during that time I learned about what my family calls, “Toad In The Holes.”

When I make them I am taken back to our time in England and the fun we all had.  I hope you will try these.  I know you will like them and perhaps create a new breakfast favorite!

Toad in the Hole

An easy and tasty Egg Breakfast
Ingredients
  • 2 large eggs
  • 2 thick slices of bread, preferably French or Italian
  • Butter
  • Salt and Pepper to taste
Instructions
  1. Slice your French or Italian bread about 1 inch thick. (You can use a slice of Texas Toast also)
  2. Using a round cookie cutter or biscuit cutter, remove some bread from the center of the slice.
  3. Butter both sides of the bread. (this can get messy!)
  4. Place the bread on an electric griddle or in a frying pan.
  5. Crack the egg and put it in the hole of the bread.
  6. Add salt and pepper to taste.
  7. Cook for about 3 minutes on medium heat. When the egg looks set and almost done, flip it and cook the other side about 2 – 3 minutes.

Don’t they look delicious?  Some fruit and sausage or bacon would finish this off!  Hope you enjoy!
