Monday Blues Biscuits

Yes, it says Monday Blues. I know it’s not Monday but sometimes I get frustrated on a Thursday waiting for the weekend. I thought these Monday Blues Biscuits might be perfect and give you a little pick me up! I love them, they are a super easy and satisfying. Add a little bacon on the side or turkey sausage, a glass of juice and you have a great breakfast. Warm them up later and serve with a cup of coffee or hot tea. Oh heck, make a day of it and have the last little bit for dessert! ha ha

Monday Blue Biscuits

3 cups Bisquick or baking mix
1 cup + 2 TBSP milk
1 1/4 cup fresh blueberries
2 TBSP sugar

Once you have these items out, set your oven to 400 degrees, put 2 TBSP of butter into a cast iron skillet and place it in the oven. If you do not have a cast iron skillet, use a 9 inch baking dish instead.

Mix the baking mix and sugar, then add milk. Stir just until it is all blended, don’t over mix it. Now fold in the blueberries. Let this sit for about 5 minutes.

Now that you have your mix, it should be loose but not runny, pour it into the hot pan. Spread it out and place into the oven for 20 minutes. It will come out all nice and golden brown.

Mix 1 TBSP of milk into 1 cup of powered sugar and pour on top of the biscuit.

Cut and serve while hot!

Spatulas On Parade

After many years of cooking and baking, countless request for recipes, along with suggestions that I write a blog or cookbook, I decided to finally bite the bullet. As a home based business owner, mom to 3 grown sons, I needed to fill my time. To do this, I began Spatulas On Parade in June 2012. My passion for food and photography are fueled to new heights each day.
